Grilled Salmon with Artichokes and Zucchini

INGREDIENTS: 
  • 12 ounces marinated artichoke quarters (about 1 1/3 cups), drained and chopped, plus 2 tablespoon marinade from the jar or can
DIRECTIONS:
  1. Preheat grill. Toss the artichokes and marinade, zucchini, lemon wedges, garlic, shallot, thyme, 1 tablespoon olive oil, the red pepper flakes, 1/2 teaspoon salt and a few grinds of pepper in a bowl.  Let sit for 15-20 min. 
  2. Place artichoke and zucchini mixture in a oiled grill pan and place on grill to start cooking.
  3. Meanwhile, pat the fish dry with a paper towel and brush with the remaining 2 teaspoons olive oil; season with salt and pepper.
  4. Place Salmon on Grill pan and cook until done, about 10 min.  Depending on Grill, cooking time may vary.
  5. Serve Salmon with grilled veggies and top with fresh chives.
